People are Rude and Katie is Old

So happy and hopeful right before THEY sat behind us

It was half price night at the movies last night so Chris and I went to watch The Hobbit. Unfortunately the most of the people sitting in that theatre in that with us didn't know that, like a library, you're not supposed to have conversations in the theatre. When kindly asked if they could keep their voices down, the people behind us bit my head off. A bit later the two girls in front of us had a full blown conversation abut what perfume they were wearing and then another one all based on "stop looking at me." Great. I'm a pretty easy going person when it comes to a lot of things. But excessive noise in spaces where it should not be drives me up the wall. That and rude people. I think I'm getting old. Moral of the story is: 

Cheap movie night. Never again.

Also, they took a lot of liberties with The Hobbit. A lot. I'm not sure this should be a movie series. And I don't think they've improved on the book. Not impressed Peter Jackson. Not impressed.

Quinoa Burrito Bowls


Last night I made Quinoa Burrito Bowls for dinner. Amazing. Its a fantastic idea for a meal because you can use whatever you have in your fridge and do what works for you. I got the idea from Pinterest (here's the original recipe http://theshiksa.com/2012/05/01/quinoa-black-bean-burrito-bowls/) and adapted the recipe so it worked for Chris and I.

Ingredients
2 cups quinoa, cooked
1/2 cup chopped parsley
1 lime
2 tsp olive oil
1 onion, chopped
1 clove garlic, minced
1/2 cup water
1 can mixed beans, drained and rinsed
2 tsp chili powder
1/2 tsp chipotle powder
dash of red chili flakes

Set an element on medium heat and heat up 1 tsp of olive oil in a frying pan. Cook down the onion for about 4 minutes then add the garlic. Cook for another minute. Add 1/2 cup of water, the beans, 1/4 cup parsley, and the spices. Add the juice of half the lime. Bring to a slow boil and then simmer the mixture until its thick. 

In another frying pan heat up your remaining tsp of olive oil over medium heat and then add the quinoa.  When the quinoa is heated through add the remaining 1/4 cup of parsley and the juice of the remaining lime half.  

While everything is cooking assemble you're toppings. They can be anything you want:

plain greek yogurt
salsa
hot sauce
lettuce / cabbage
peppers
tomato
avocado
peanuts
lime
guacamole
cheese


Basically anything you put on a burrito you can put in your bowl; last night we used red cabbage, red and yellow peppers, tomato, salsa, and avocado to top our bowls. To assemble start with quinoa, add the beans on top and then layer your topping as you like. The order of ingredients in the bowl doesn't really matter because you end up mixing it up in the end anyway. This is a quick and tasty meal that is healthy and filling. Score. Oh, and Chris loved it, so DOUBLE SCORE!

Guess who walked to work yesterday? This girl. One resolution partially completed! Also on the way to work I commented on the total lack of coat one guy was wearing and he asked me for my number. What up?!

Our Holidays in the South

We headed down to Toronto, through a snowstorm (it took us 9 1/2 hours to get down south, ah!) this year. We spent some quality time with Chris's family, Chris hip checked a 14 year old in a family hockey game, we ate a lot of stuffing, I slept a lot, Crystal had her baby (Titus Willem) on boxing day so we went to visit them, we saw a Bulldogs game, Chris turned 26, and we watched The Village. It was fantastic!

And We're Back!


The holidays are officially over. We're home, we're both back at work and all of our friends and family are back home and back to school. We had a phenomenal holiday (more on that tomorrow). Its a new year and it's going to be a big year. We're looking into new jobs, going back to school, insane renovations, weddings, possibly a trip and who knows what else. But no new year is complete without resolutions, even though no one ever really sticks to them. But maybe this blog will help me stick to them because they are publicly documented. So here goes, a list of resolutions for 2013:

1. Read my bible every day. Thats kind of a no brainer. I'll let you know what study I'm going to do this week.

2. Clean my house at least once a week. Working full time and all the other things that fill up our life mean that I often neglect my house. But not this year, at least once a week I'm going to clean my house!

3. Wash my makeup off every night. I am the worst. I never, ever wash my makeup off at night and apparently thats back for your face, so it's time to grow up and start washing my face. Haha! And I'm adding flossing to this one. Every time I wash my face I'm going to floss. We'll see if this one holds up.

4. Read 12 books this year. I used to love reading but University took the fun out of it. So now that I'm no longer a student I cant wait to dive back into the world of literature.

5. Walk to work at least once a week. I live less than 15 minutes away from work but I drive there every day. Mostly because I don't want to wake up earlier and it's really cold outside in the winter. But it's a waste of gas and I need to get outside.

So there is the list. I kept it short and simple for a reason, so that it is doable. I'll be doing an update of how I'm sticking to my resolutions every few months. Here's to a new year!
